Elfriede's Rotkraut

(Red Cabbage)

1 head of Red Cabbage - about 2 pounds

½ cup = 1 stick = ¼ lb Butter

½ cup chopped onions

3/4 cup white vinegar

1 tablespoon salt

½ teaspoon pepper

¼ cup water

2½ cups of pealed, sliced tart apples

½ teaspoon ginger - or thin slice of fresh ginger (optional)

Shred the Cabbage. Melt the butter in a heavy sauce pan. Add onions and sautė lightly.
Add the cabbage and remaining ingredients and mix lightly.
Cover and simmer for about 1¼ hours.
Note: You can prepare this the day before it is to be served, and let it sit out overnight, then just warm to serve.
Serves 10 people.

7up Brunch Cake

Cream together 3 soft sticks of butter and 3 cups of sugar for 20 min.
Add 5 eggs, one at a time.
Add 3 cups flour, 2 tablespoons of lemon extract.
Blend well. Fold in ¾ cup of 7up.
Bake at 3250F. for 1 to 1¼ hours in bunt pan.


Peanut Blossoms

(Cookies)

cup of Peanut butter

1 egg

½ sugar

1 teaspoon vanilla

½ cup butter

½ teaspoon Salt

½-cup brown sugar

1 teaspoon Baking soda

1¾ cup flour


Combine the first four ingredients on the list.
Add egg and vanilla. Add flour, soda and salt.
Shape in balls and dip in white sugar.
Bake at 375 0 F. for 8 min
Press in Hershey Candy Kisses after 5 min.




KFC Coleslaw

Ingredients:

½ cup mayonnaise

cup sugar

¼ cup milk

¼ cup buttermilk

2½ tablespoons lemon juice

1½ tablespoons white vinegar

½ teaspoon salt

teaspoon pepper

8 cups finely chopped cabbage (approx. 1 head)

¼ cup shredded carrot (1 medium carrot)

2 tablespoons minced onion



Peanut Butter Cookies

½-cup of butter

-cup flour

½-cup peanut butter

½-teaspoon baking powder

½-cup sugar

¾-teaspoon baking soda

½-cup brown sugar

¼-teaspoon salt

1 egg


Mix butter, peanut butter, sugars and egg thoroughly.
Blend all dry ingredients and stir in with it. Heat oven to 3500 F.
Roll dough into balls the size of large walnuts.
Flatten with fork dipped into flour, at 900 angles, for the desired effect.
Place 3 inches apart on a lightly greased baking sheet. Bake 10 – 12 minutes.




Banana of Pumpkin Cake / Bread

2 cups of sugar

2 teaspoons cinnamon

1¼-cup veg. Salad oil

4 eggs

1½-cup pumpkin puree or 4 mashed bananas


3 cups flour

2 teaspoons baking powder

2 teaspoons baking soda

1 teaspoon salt

½-cup seedless raisins

½-cup golden raisins

1-cup chopped walnuts or pecans


Preheat oven to 3500 F.
Place sugar, oil and pumpkin or banana puree into large bowl and mix well.
Add eggs one at a time, beating well after adding each one.
Sift together the flour, baking powder, soda, cinnamon and salt then fold into the cake batter.
Stir in the raisins and nuts, pour into a greased 10-inch tube pan.
Bake 1¼ -hours or till done.
Do not open the oven door before 1 hour. Let cool slightly in pan before turning on to a cooling rack.
Yield = 12 servings.


Southern Gumbo

¼ -cup bacon drippings or butter

1½-teaspoon salt

1 large onion, chopped

½-teaspoon pepper

2 cups canned tomato

3 cups okra, sliced

3 cubes chicken bouillon

1 cup uncooked rice

Melt dripping or butter in a large heave soup kettle. Add onion. Sautė
until lightly browned. Add remaining ingredients. Tightly cover,
Heat to boiling, and then reduce heat. Simmer for 30 min.
Serve HOT.
Serves 6.


Quiche Lorraine

Dough:

4 oz. flour

1 oz. butter

1 dash of salt

1 tablespoon cold water

1 oz. of shortening


Filling:

4 oz. lean ham

3 eggs

10 oz. thick cream

Salt& pepper to taste

Sift four and salt into a bowl. Add shortening and butter until a crumbly mass exists.
Add the water, stir with a knife. Knead the dough with your hands and form a smooth dough ball.
Place the dough ball onto a floured surface and with a roiling-pin shape into a round form approx. 9 in. in diameter.
Grease a baking dish, lay dough into the dish poke holes with a fork into the dough in several places.
Bake 15 min. in a 3550 F. preheated oven.
Remove from oven and add the filling mix.
Bake for an additional 30-40 min. (till golden brown)
Serve hot or cold.
Serves 4 people.


    Speedy Spinach Lasagna

1 package spaghetti sauce_ mix

1 ea 6-ounce can tomato paste

1 ea 8-ounce can tomato sauce

1¾-cup cold water

½-cup Parmesan cheese

½-pound sliced Mozzarella

2 eggs

½-teaspoon salt

1 ea 15-ounce container ricotta or 1 pound creamed cottage cheese
1 ea 10-ounce package frozen chopped spinach, thawed and drained
½-pound uncooked lasagna noodles, broken in half
Empty spaghetti sauce mix into saucepan; add tomato paste, tomato sauce and water.
Heat, and keep stirring, until well blended. Remove from heat.
Beat eggs in a large bowl and add Ricotta or cottage cheese, spinach, salt and ¼ cup Parmesan cheese.
Lightly grease bottom of a 13x9x2 inch baking dish; cover with a little sauce.
Layer noodles, half of the cheese-spinach mixture, half the mozzarella cheese and half the tomato sauce.
Repeat layers.
Sprinkle with ¼-cup Parmesan cheese.
Cover dish with a lightly greased sheet of aluminum foil and bake in a preheated 3500 F. oven
for 60 min. or until noodles are tender. Let stand 10 min. before cutting in squares and serving.
Serves 8.

Elfriede's Oven Baked Cheese Cake

Crust:
⅓-cup of powdered sugar

¼ -lb butter

1½ cups of graham cracker crumbs

Melt butter and add the graham cracker crumbs and sugar.
Line the bottom of a 9"x2" pan or a spring form pan, packing firmly.

filling:

1 cup granulated sugar

4 eggs

3 (8 oz.) packages of softened Philadelphia Cream Cheese.

1 generous teaspoon of vanilla flavoring
½ teaspoon baking powder
Mix the ingredients well.
Pour into the pan and bake in a preheated oven at 350 degrees for about 50 minutes.
Do not turn off the oven yet.

Topping:

½ cup = 1 stick = ¼ 1 pint of commercial sour cream

1 can (21 oz.) of prepared cherry pie filling

½ can of well drained sour pitted cherries.

Whipped cream

Remove the cheese cake and top with 1 pint of commercial sour cream
and return to the oven and bake for another 5 minutes.
Let the cake cool.
Top with 1 can (21 oz.) of prepared cherry pie filling which you have mixed with
½-can of well drained sour pitted cherries.
Chill over night.
This can be served with whipped cream topping if desired.

Linsen Suppe

(Lentil Soup)

1 pkg. Lentils = 16 oz. = 2 cups uncooked Lentils.

4 strips breakfast bacon, cut up into small pieces.

1 large onion

1 carrot

1 celery stalk

3 cloves of garlic

2 potatoes
(all chapped finely, diced separately, keeping potatoes separate).

2 bay leaves (Leave whole, they will be removed before serving).

Place all ingredients (except for the potatoes) in a large pot.
Fill pot with cold water.
Add salt & pepper.
Cover and cook for 2 hours.
Add the diced potatoes and cook for 30 more minutes or until all is done to your liking,
You can add hotdogs (use real Frankfurters made with the skins made of intestine's) to the Soup,
Just before serving.
Serve with bread and butter, and use Soy Sauce to season to taste.

Oma's Dumplings

3 potatoes - cut like home fries

½ lb. breakfast bacon - cut into small pieces.

1 stick butter 1 lb. flour

Salt dash of Nutmeg

Parsley 2 eggs - beaten

1½ cup Milk

6 slices white bread - cut like for croutons.

Mix all dry ingredients in large bowl.
Add eggs and use just enough of the Milk to hold the Dough together. Set aside.

In large kettle heat salted water to a boil.
Add the Potatoes.

Use a teaspoon to make small drop-dumplings,
Add to the boiling Potatoes.

The Dumpling will sink to the bottom of the Kettle.
They will rise to the top when done. By then the Potatoes will also be done, and the
water can be drained off.

Cut the bacon into small pieces like bacon bits, fry it in a pan, drain
off the Bacon grease, and add the butter.
Cook for a few minutes till it gets a foamy look.

Then pour over the dumpling / potatoes, and mix well before serving,
Serve with fruit or salad.

Rinds – Rouladen

Beef Rouladen

4 Beef Round Tip Sandwich Steaks or Sirloin Tip Sandwich Steaks.

3 finely chopped Onions Parsley - Chopped finely

Salt and pepper

4 Strips of Breakfast Bacon cut in half.

2 Tablespoons of Corn Starch Crisco Vegetable Shortening

You will need string and/or Skewers to hold rolls of meat rolls together.

Place the Sandwich Steaks out on flat surface, add Salt and Pepper.
Cover meat with Onion and Parsley.
Lay 2 half strips of Bacon across the meat.
Roll up the meat tightly like a log.
Tie the Rouladen with string or pin with skewers to keep from unrolling while the meat is being cooked.
Brown the meat slowly for approx 1 hour on top of the stove.

Add water. Cover, then let simmer for approx 1½ hours.
Mix ¼ cup cold water with Corn Starch. Add slowly to the brown gravy to thicken it.

Serve with mashed Potatoes, Egg Noodles and Red Cabbage.



Sausage Cake

1 pound sausage

1 teaspoon soda

1½-cups sugar

1½ -cups brown sugar

½-cup Buttermilk

3 cups flour

1 teaspoon cinnamon

1 teaspoon allspice

1 teaspoon cloves

1 teaspoon nutmeg

1 cup raisins

1 cup pecans

½ cup double strength coffee

Combine sausage with sugars.
Blend well. Dissolve soda in buttermilk.
Combine 2 cups flour and spices.
Combine remaining 1 cup flour with nuts and raisins, coating well.
Add dry ingredients to sausage and sugar mixture alternating with buttermilk and coffee.
Stir in nuts and raisins.
Pour into long narrow pan.
Bake in moderate oven one hour or until well done.
Glaze with 2 cups powdered sugar, 1½ teaspoon vanilla, 3 teaspoons milk and 3 tablespoons butter.

GINGER BREAD PANCAKES

3 cups all purpose flour

2 teaspoons ground ginger

1 cup whole wheat flour

1 teaspoon cinnamon

4 teaspoons baking powder

½ teaspoon ground cloves

1 teaspoon salt

¾ cup brown sugar, packed

Combine all ingredients and place in a quart jar, mixing thoroughly.

In a separate bowl:
Place 4 teaspoons of instant coffee in ½ cup of boiling water; stir until dissolved and cool completely.
Blend in 1⅓ cups mi1k, two eggs and two tablespoons of oil;
set aside.

Place ½ contents of the jar into mixing bowl and make a well in the center.
Pour liquid mixture into the well and stir until just moistened.
Heat ¼ cup of batter on a greased gniddle until bubbles form along the edge.
Flip and heat until go1den brown.
Makes 16-4 inch pancakes.


Cappuccino Mix

2½ cups instant chocolate drink mix

8 cups dry milk
2 cups powdered sugar
1 cup instant coffee granules
8 oz. Jar French vanilla flavored non-dairy creamer
Combine all ingredients in a large bowl, then store in an airtight container.

Cappuccino:

¼ to ⅓ cup Cappuccino mix
6 to 8 oz. hot water
Combine mix and hot water, stir to blend.


Zucchini Nut Bread

3 eggs, beaten

2 cups sugar

1 cup veg. Oil

2 cups grated unpeeled zucchini (raw), drained

2 cups flour

¼ tsp. baking powder

1 tsp. salt

2 tsp. baking soda

2 tsp. Cinnamon

2 tsp. Vanilla

1 cup chopped nuts

Mix together egg, sugar and oil; mix thoroughly.
Stir in zucchini.
Sift together dry ingredients. Set aside ½ cups.
Add flower to zucchini mixture; mix well; stir in vanilla.
Mix reserved flour with nuts; add to batter and mix thoroughly.
Pour into greased and floured load pans.
Bake at 3250 F. for 50-60 minutes or until wooden tooth pick inserted in center comes out clean.
Cool before slicing.


Spinach Salad

½ lb. Spinach

½ red onion

1 pt. Strawberries

½-cup sugar

2 tablespoons Sesame Seed

1 tablespoon Poppy Seed

¼ teaspoon Worcester sauce

¼-cup Red Wine Vinegar

½-cup olive oil
